Instructions: Cut up rabbit as for frying, brushed with butter, sprinkled with salt and pepper. Into the oven at 300 for 30 min, baste with butter from bottom of pan mixed with store bought bbq - back into oven turned down to 250 for 30 min, baste again and sprinkle with chopped pecans - back into oven till done (about 30 more min or 160 degrees in thickest piece). Combine soups and water in large sauce pan. Add butter and bring to a boil. Remove from heat and add rice. Pour mixture over seasoned rabbit in a 3 quart casserole dish. Cover and bake at 300 for 2 hours or until rice is tender. In both Oven & Stove Top
Glaze
Preheat the oven to 350 degrees Fahrenheit. Combine the pork & rabbit meat. Stir spices into egg whites. Combine with meat. Mix in the flour. Form into balls and lightly coat/roll flour. Put into boiling water simmer for 5 min. Remove from the water and place in baking dish. Bake for 10 min. Remove from the onion, glaze and return to oven for 3-5 min. This recipe makes 40-50 meatballs 1"-1.25" in diameter. *NOTE* This is a MILD recipe, additional ginger, chives, and other items can be added to enhance the flavor as you please |
