In both Oven & Stove Top
- 3 lbs ground rabbit (one boned large rabbit carcass)
- 1 lb ground pork
- 2 beaten egg whites
- 2 tbsp grated ginger
- 1/2 tsp pepper
- 1/2 tsp all spice
- 1 tsp ground cloves
- Salt to taste
- 1/2 cup flour
Glaze
- 2 egg yokes
- 3 tbsp honey
- 1/4 tsp ground ginger
- 1 tsp parsley
Preheat the oven to 350 degrees Fahrenheit. Combine the pork & rabbit meat. Stir spices into egg whites. Combine with meat. Mix in the flour. Form into balls and lightly coat/roll flour. Put into boiling water simmer for 5 min. Remove from the water and place in baking dish. Bake for 10 min. Remove from the onion, glaze and return to oven for 3-5 min.
This recipe makes 40-50 meatballs 1"-1.25" in diameter.
